“The 2016 resembles it’s previous vintage but has a better mouthfeel with beautiful natural acidity… delicious!”
“Old School”, minimal intervention Chardy, I’ve been playing with and making chardonnay for my personal consumption for years. 2016 is the second Chardonnay I decided to put into bottle.
I started with a small parcel of Chardonnay from Willunga, some from Christmas Hill (Adelaide Hills, just in the ranges of McLaren Vale), which I treated mean and showed a small amount the insides of a new French Puncheon.
Basket pressed and open fermented, this baby had character.
I then organised for our mates at Paracombe to make a small parcel for us in a more “clean and lean” style, which I put together with my wild child.
With this wine I’m aiming for the best of both worlds. Old school oxidative character and new technique finish.
Fresh, crisp without being brittle and skinny. Perfect for summer days or any excuse.
